Easy Ham and Rice Casserole for 40
6 C uncooked rice
12 C boiling water
1 1/2 tsp salt
10 C cubed ham
12 stalks celery, sliced
4 C onions, chopped
2 green peppers, chopped
4 lbs carrots, sliced
4 cans cream of chicken soup
3 cans cream of mushroom soup
Place rice, water and salt in greased pan (12 X 20).
Add vegetables and ham and stir.
Add 4 cans cream of chicken soup and 3 cans cream of mushroom soup and stir well.
Cover tightly with foil.
Bake 350 for 1 hour and 45 minutes.
(If you divide into 2 (12 X 20) pans the cooking time will be less.)
