Vegetable oil<br />
2 lb. sliced onions<br />
1 C. flour<br />
4 tsp salt<br />
2 tsp ground pepper<br />
1 lb. dehydrated diced potatoes (could use 24 medium fresh)<br />
1 gal. beef broth<br />
2 C. tomato sauce<br />
1 lb. sliced frozen carrots (3 C.) cooked as desired<br />
8 oz. sliced celery (2 C.) cooked as desired<br />
Topping:<br />
1/2 gal. water<br />
1 1/2 C milk<br />
4 oz. butter<br />
1 Tbsp salt<br />
1 lb. dehydrated potato flakes</p>
<p>Brown beef in oil; when partially browned, add onion and cook until beef is completely browned. Add flour, salt, pepper and cook until meat is coated with flour. Add diced potatoes, beef broth and tomato sauce. Simmer about 1 hour or until meat is tender and sauce thickens. Skim off any excess fat.<br />
While mixture is simmering, prepare mashed potatoes. Bring water, milk, butter and salt to a boil. Whisk in potato flakes. Divide beef mix into pans. Sprinkle carrots and celery over top of each pan. Top pans with scoops of mashed potatoes arranged in rows.<br />
Bake 450 for 15 min. or until potatoes are browned.</p>
<p>Serves 48.</p>

<p>SANTA FE STEW<br />
2# ground beef (can substitute ground or diced turkey or chicken)<br />
1 onion finely chopped<br />
1 can pinto beans<br />
1 can light red kidney beans<br />
1 can black beans<br />
1 14oz can crushed tomatoes<br />
1 can diced tomatoes with green chilis<br />
3 cans Shoe Peg Corn<br />
2 cups water<br />
2 pkgs taco seasoning<br />
2 pkgs ranch dressing mix<br />
Saute meat in small amount of oil until cooked through.<br />
Add chopped onion, cook until soft.<br />
Add all canned beans, tomatoes, corn (do NOT drain or rinse).<br />
Add water, and dry seasoning.<br />
Stir to mix well.<br />
Cook on low 2-2 1/2 hours or in CrockPot  on low 6 hours.<br />
Serves 8-10 generous helpings.</p>

			<content:encoded><![CDATA[<p>As the New Year begins, as well as our 13th year, Souper Supper is still serving hot meals to those who need them.</p>
<p>We are forever grateful to St. Charles Church in Hailey, Idaho for having given us our home for the past 12 years.</p>
<p>We attribute our success to the generosity of our community.  A huge THANK YOU belongs to all those involved in the Turkey Trot and also to the Wicked Spud for including us in their fundraisers.</p>
<p>Albertson&#8217;s has donated 9966 3/4 lbs. of bakery goods, meat, dairy and produce in the last year.  This is used in meals to serve as well as food for our guests to take home.  Atkinson&#8217;s and Big Wood Bread continue to support us, as well.</p>
<p>School groups, church groups, neighborhood groups and idividuals throughout the community form crews to prepare and serve these meals.  For each and every one of them we are so very grateful.  They have turned us into the smooth working organization that gets better every year.</p>
<p>In 2009, alone, Souper Supper served over 7000 meals!</p>
